Here’s an easy breakfast wrap idea for you moms who need to rustle up something quick before the baby misses you! It’s an entire healthy meal in a convenient package- eat with one hand, soothe your little one with the other 🙂
Not that breakfast wraps are anything new, but I had never made one until seeing a friend’s Facebook post. She made her own wrap at home in lieu of grabbing one on her way to work. Saving money?! Hmph! Sounds good to me!
What You’ll Need
- 2 whole wheat tortillas
- about 2 cups of spinach
- 3 eggs
- approx.1/4 milk
- 1/3 kielbasa sausage
- onion
- cheddar cheese
Preheat oven to 375°. Add milk to the eggs plus any other seasonings you like and beat until completely combined. Chop your spinach, onion and sausage. Scramble the eggs to your preferred doneness.
For whatever reason, I decided to spread a little butter on one side of the tortilla. I felt like chef Ramsey. HA! 🙂 You can find the basting brush here.
Put it All Together!
Assemble your wrap, spreading out the cooked eggs, spinach, onion and uncooked sausage.

Holding the grater over the open tortilla, grate on as much cheese as you like.
Once you’ve got all your ingredients in the tortilla, carefully fold the two sides in. As you can see, I had a little trouble keeping my tortilla intact. 😉 Add a little butter to help “glue” the tortilla together.
Set to bake for 8-10 minutes. Play a few rounds of peekaboo or watch an episode of Doc McStuffins and BOOM! Done!
As you can see, this makes for a somewhat crispy wrap. If you prefer a soft wrap, and to make this even quicker, combine all the ingredients in a pan, scramble ’em up and wrap in the tortilla! VOILA!
I used whatever ingredients I had on-hand but one thing I would add is some sliced bell peppers. They’re high in Vitamin C which is great for hair health and adds a nice crunch!
