While they’re an important part of a balanced diet, veggies are definitely not on everyone’s “favorite things to eat” list. I, for one, don’t mind vegetables at all and always make sure I have something green on my plate.
If you’re anything like my husband, though, most of them leave a bad taste in your mouth… literally. But there are some ways to eat your veggies even if you don’t like ’em!
Drink Your Veggies
When I was introduced to green smoothies just a few years back, I wondered why I hadn’t started making them earlier in life! All you gotta do is blend your favorite fruit along with a green or two like spinach, kale or even broccoli and you’ve got a super healthy AND tasty beverage.
ALL. YOU. TASTE. IS. FRUIT.
For the smoothie above I simply blended a healthy handful of spinach with a banana, mango and little orange juice. Yummers!
Season & Sauté or Bake Your Veggies
A little salt and pepper can take your basic veggies from bleh to BAM! Other herbs and fixings like chopped garlic are great on broccoli or green beans when sautéed. Just throw them in a pan with a little olive oil and cook while tossing for about 5-7 minutes for a nice stir fry along with your meat of choice!
Believe it or not, baking or roasting veggies helps bring out their natural sweetness! This is especially true for root vegetables like carrots or potatoes but can be done with other veggies like cauliflower or leafy greens. Baked kale chips – kale leaves tossed with olive oil and salt, baked until crisp for 20 minutes – are a fave among many and my little one loves his baked sweet potato fries! Give it a try!
Sneak the Veggies in a Tasty Snack
For many, the only way you’ll get them to eat their veggies is to sneak them in something you know they’ll eat… like a muffin! Garden Lites muffins not only taste great but they are THE perfect grab & go snack for us busy moms!
